For me, the perfect pan-seared salmon starts with a marinade that’s both simple and deeply flavorful. A mix of soy sauce and fresh lime juice does the job beautifully—salty, citrusy, and just sharp enough to cut through the richness of the fish. I like to let the salmon sit in this mixture for about 15 minutes, just enough to absorb the flavors without breaking down the texture. When it’s time to cook, I get a pan ripping hot and add a touch of oil, just enough to coat the surface. The salmon goes in skin-side down (if it has skin), pressing lightly to ensure even contact. A few minutes undisturbed lets the skin crisp up into something golden and irresistible. Once flipped, another couple of minutes is all it needs—just enough for the inside to stay tender and almost melting, with that perfect balance of charred edges and velvety center.
And while salmon on its own is a dream, I think it truly shines when paired with something bright and green—specifically, asparagus. A final squeeze of lime ties it all together, adding just the right amount of freshness. The whole dish is simple but feels like a treat, the kind of meal that makes you pause for a second because every bite just works.
There’s something magical about a perfectly seared salmon fillet—crisp on the outside, buttery and tender on the inside. And when you add a soy-lime marinade into the mix, it brings out the best in the fish. This recipe keeps things simple but deeply flavorful, balancing saltiness, citrus, and just the right amount of char. Pair it with asparagus for a fresh, vibrant contrast, and you have a meal that feels like a treat without any fuss.
Ingredients
For the salmon:
- 2 salmon fillets (skin-on, if possible)
- 2 tbsp soy sauce
- Juice of 1 lime
- 1 tsp honey (optional, for a hint of sweetness)
- 1 clove garlic, minced
- ½ tsp grated fresh ginger
- ½ tbsp neutral oil (like avocado or vegetable)
For the asparagus:
- 200g asparagus, trimmed
- 1 tsp olive oil
- Salt and pepper, to taste
- Zest of ½ lime (optional, for extra brightness)
Instructions
In a small bowl, whisk together the soy sauce, lime juice, honey (if using), garlic, and ginger. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them sit for 15 minutes, flipping once halfway through.
While the salmon marinates, toss the asparagus with olive oil, salt, and pepper. Set aside.
Heat a large pan over medium-high heat until very hot. Add the oil and swirl to coat the surface. Place the salmon skin-side down and press lightly with a spatula for 30 seconds to ensure even contact. Cook undisturbed for 3–4 minutes until the skin is golden and crisp.
Carefully flip the salmon and cook for another 2–3 minutes, depending on thickness, until the flesh is just opaque and tender. Remove from the pan and let it rest.
In the same pan, add the asparagus and cook for 3–4 minutes, tossing occasionally, until slightly charred but still crisp. Add lime zest for extra freshness.
Plate the salmon alongside the asparagus, finishing with an extra squeeze of lime. The contrast of crispy skin, silky flesh, and bright greens makes every bite satisfying.
If you want an extra glossy, caramelised finish, brush the salmon with a little leftover marinade during the last minute of cooking.
