Persimmon Salad, or How I’m Learning to Trust the Universe

persimmon salad

You know what’s the hardest part of this recipe? Waiting for the persimmon to ripen. Not just soft, but perfect—the kind that melts the second you slice into it. It’s like leaving an avocado to ripen and then, on some random Thursday, realizing its moment has arrived. Destiny.

But once you have that perfectly ripe persimmon, everything else falls into place: peppery arugula, creamy goat cheese, crunchy pine nuts, a little red onion for bite, and a sprinkle of chili flakes for that unexpected heat. Sweet, salty, spicy—basically, a salad with main character energy.

If you need me, I’ll be over here, dramatically waiting for my next persimmon to reach its peak.

Ingredients:

  • 2 ripe persimmons (soft but not mushy)
  • 2 cups arugula (or a mix of arugula and baby spinach)
  • 60g (about ½ cup) goat cheese, crumbled
  • ¼ small red onion, thinly sliced
  • 2 tbsp pine nuts, toasted
  • ½ tsp chili flakes (adjust to taste)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (or pomegranate molasses for extra depth)
  • ½ tsp honey (optional, if you like a hint of sweetness)
  • Salt & freshly ground black pepper to taste

Instructions:

  1. In a dry pan over medium heat, toast the pine nuts for 2-3 minutes, stirring frequently, until golden and fragrant. Remove from heat and set aside.
  2. Slice the persimmons into thin rounds or wedges, depending on your preference. If they’re extremely soft, you can gently scoop out spoonfuls instead.
  3. In a large bowl, toss the arugula with the red onion slices. Arrange the persimmons on top, followed by crumbled goat cheese and toasted pine nuts.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, honey (if using), salt, and pepper.
  5. Drizzle the dressing over the salad, then sprinkle with chili flakes for a little heat. Give everything a gentle toss or serve as is, letting everyone mix their own.
  6. Take a bite and embrace the perfect balance of sweet, creamy, spicy, and crunchy. And if your persimmon isn’t quite ready yet… practice patience. The universe will let you know when it’s time. 😌

Optional variations:

  • Swap goat cheese for burrata or feta for a different texture.
  • Add pomegranate seeds for extra juiciness.
  • Use candied walnuts instead of pine nuts for a touch of caramelized crunch.
  • For a heartier meal, serve alongside grilled chicken or add a handful of cooked quinoa.

This salad isn’t just about flavors—it’s about timing. And sometimes, the best things really are worth the wait.
