If you’re looking for an appetizer that’s incredibly easy to make but tastes like something from a cozy restaurant, these Miso Baked Mushrooms are exactly what you need. Juicy mushroom caps are filled with a sweet, savory, and umami-rich miso glaze, topped with a little melted cheese, and finished with plenty of fresh green onions. They come together in just a few minutes and make a perfect starter, side dish, or light snack.
Ingredients
- 8 large white or cremini mushrooms
- 1 tbsp white or yellow miso paste
- 1 tbsp soy sauce
- 1 tsp rice vinegar (or apple cider vinegar)
- 1 tsp honey
- 50 g (about ½ cup) grated mozzarella or mild melting cheese
- 2–3 green onions, finely sliced
Instructions
- Preheat your oven to 200°C (400°F).
- Clean the mushrooms with a damp paper towel and carefully remove the stems. Arrange the mushroom caps on a baking tray lined with parchment paper.
- In a small bowl, whisk together the miso paste, soy sauce, vinegar, and honey until smooth.
- Spoon a little of the miso mixture into each mushroom cap, making sure every mushroom is evenly coated.
- Sprinkle the grated cheese generously over the top of each mushroom.
- Bake for 15–20 minutes, or until the mushrooms are tender and have released their juices, and the cheese is melted and lightly golden.
- Remove from the oven and immediately top with plenty of freshly sliced green onions.
- Serve warm as an appetizer or alongside grilled meat, rice, or a fresh salad.
Tips
- White miso creates a milder, slightly sweeter flavor, while red miso gives a richer, more intense taste.
- Add a pinch of chili flakes or a drizzle of chili oil if you like a little heat.
- For extra crunch, sprinkle toasted sesame seeds over the mushrooms before serving.
- Any good melting cheese works well, including mozzarella, gouda, or cheddar.
Storage
Store leftover mushrooms in an airtight container in the refrigerator for up to 2 days. Reheat them in the oven or air fryer for a few minutes until warmed through. They are best enjoyed fresh while the cheese is still melted.
