Liver cake is a classic Eastern European dish that looks like a celebration cake but is actually made with tender liver pancakes layered with a creamy garlic filling and sautéed vegetables. Even people who aren’t usually fans of liver are often surprised by how flavorful, juicy, and delicate it tastes. It’s perfect for holidays, family dinners, or as a make-ahead appetizer because it becomes even better after resting in the refrigerator.
Ingredients
For the liver pancakes
- 700 g chicken or beef liver
- 1 medium onion
- 2 eggs
- 150 ml milk
- 120 g all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- Vegetable oil for frying
For the filling
- 3 large carrots, grated
- 1 large onion, finely chopped
- 300 g sour cream
- 150 g mayonnaise
- 3 garlic cloves, crushed
- A generous handful of fresh dill and parsley, finely chopped
- Salt and pepper to taste
Instructions
Rinse the liver thoroughly and remove any tough membranes if necessary. Place the liver and onion into a blender or food processor and blend until completely smooth.
Add the eggs, milk, flour, salt, and black pepper to the liver mixture. Blend again until you have a smooth batter with no lumps. Let the batter rest for about 10 minutes while you prepare the filling.
Heat a lightly oiled non-stick frying pan over medium heat. Pour in enough batter to make a thin pancake, swirling the pan to spread it evenly. Cook for about 1–2 minutes on each side until lightly browned. Repeat until all the batter is used, adding a little more oil if necessary. Allow the pancakes to cool completely.
Meanwhile, heat a little oil in a skillet. Add the chopped onion and cook for 3–4 minutes until translucent. Stir in the grated carrots and cook for another 8–10 minutes until the vegetables are soft and lightly caramelized. Season with a pinch of salt and allow them to cool.
In a bowl, combine the sour cream, mayonnaise, crushed garlic, and chopped herbs. Mix well and season with a little black pepper.
To assemble the cake, place one liver pancake on a serving plate. Spread a thin layer of the garlic sauce over it, then add a spoonful of the sautéed vegetables. Continue layering the pancakes, sauce, and vegetables until all the ingredients have been used.
Finish the top with an extra layer of sauce and decorate with the remaining carrots, fresh herbs, or grated egg yolk if desired.
Cover the cake and refrigerate for at least 4 hours, preferably overnight. This resting time allows the pancakes to absorb the filling, making the cake incredibly moist, tender, and flavorful.
Serving Suggestions
Serve the liver cake chilled or at room temperature as an appetizer, light lunch, or part of a festive table. Slice it like a regular cake and garnish each portion with fresh herbs. It pairs wonderfully with fresh vegetables, pickles, or crusty bread.
Tips
- Chicken liver creates a milder, more delicate flavor, while beef liver has a richer taste.
- Don’t overcook the pancakes or they may become dry.
- The cake tastes even better the next day after the flavors have fully developed.
- You can decorate the top with chopped herbs, grated boiled eggs, or finely chopped walnuts for a festive presentation.
