- 1 small garlic clove, grated (optional)
- 2–3 tbsp water, if needed
- Salt and black pepper, to taste
For serving
- Fresh dill, chopped
- Green onions, sliced
- Lime wedges
Instructions
- Preheat the oven to 220°C (425°F).
- In a large bowl, whisk together the miso paste, olive oil, soy sauce, honey, and water until smooth.
- Add the cauliflower florets and toss until evenly coated.
- Spread the cauliflower on a baking sheet in a single layer.
- Roast for 25–30 minutes, turning once halfway through, until golden brown and slightly caramelized around the edges.
- Meanwhile, prepare the sauce. In a bowl, combine the hummus, Greek yogurt, lime juice, and garlic. Mix until smooth.
- Add a splash of water if needed to create a creamy, spoonable consistency. Season with salt and pepper to taste.
- Spread the hummus-lime sauce onto a serving plate or shallow bowl.
- Pile the roasted cauliflower on top and finish with fresh dill and green onions.
- Serve warm with extra lime wedges on the side.
Tips
- White miso gives a milder flavor, but red miso works too for a deeper, richer taste.
- The sauce can be made ahead and stored in the refrigerator for up to 3 days.
- Add toasted nuts or chickpeas for extra crunch.
