Bibim Guksu is one of the most refreshing Korean noodle dishes for hot weather. Thin noodles are coated in a sweet, spicy, tangy sauce and topped with crunchy cucumber and boiled eggs.
It’s light, addictive, and comes together surprisingly fast. The sauce is the real star here: spicy from gochujang, slightly sweet, garlicky, and perfectly balanced with vinegar and sesame oil.
Ingredients
For the noodles
- 250 g thin wheat noodles (somyeon)
- 1 cucumber, julienned
- 2 boiled eggs
For the sauce
- 2 tbsp gochujang
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sugar or honey
- 1 tsp sesame oil
- 1 garlic clove, grated
- 1 tsp gochugaru, optional
Instructions
- Cook the noodles according to package instructions until just tender.
- Rinse them very well under cold water until completely chilled. This step is important for the chewy texture.
- In a bowl, mix gochujang, soy sauce, vinegar, sugar, sesame oil, garlic, and gochugaru.
- Toss the cold noodles with the sauce until evenly coated.
- Plate the noodles and top with cucumber and halved boiled eggs.
- Serve immediately. You can also add sesame seeds or a little kimchi on the side.
Cold, spicy, slightly sweet, and incredibly satisfying — the perfect Korean summer comfort food.
