This is one of those meals I could happily eat every week. Perfectly tender white fish served over a silky purée made from potatoes, carrots, and cauliflower, finished with a vibrant cilantro vinaigrette full of fresh herbs, red onion, olive oil, and vinegar.
The sweet vegetables balance the delicate fish beautifully, while the dressing adds freshness, acidity, and just the right amount of crunch. It’s light, healthy, elegant, and surprisingly easy to prepare.
Ingredients
For the fish
- 500 g white fish fillets (cod, hake, halibut, trout, or any firm white fish)
- 1 tbsp olive oil
- Salt
- Freshly ground black pepper
For the vegetable purée
- 500 g potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 300 g cauliflower florets
- 30 g butter
- 50–80 ml warm milk or cream
- Salt, to taste
- Freshly ground black pepper
For the cilantro vinaigrette
- ½ small red onion, finely diced
- A large handful of fresh cilantro, chopped
- 3 tbsp extra virgin olive oil
- 1½ tbsp white wine vinegar
- 1 tsp sugar
- Salt, to taste
- Freshly ground black pepper
- Optional: a pinch of chili flakes
Instructions
- Bring a large pot of salted water to a boil. Add the potatoes, carrots, and cauliflower. Cook for about 20 minutes, or until all the vegetables are very tender.
- Drain well and return the vegetables to the warm pot for 1 minute to evaporate any excess moisture.
- Add the butter and warm milk (or cream). Blend or mash until completely smooth and creamy. Season generously with salt and black pepper. Keep warm.
- Meanwhile, pat the fish dry with paper towels. Season both sides with salt and pepper.
- Heat a non-stick frying pan over medium heat with the olive oil. Cook the fish for about 3–4 minutes per side, depending on the thickness, until just cooked through and flaky. You can also bake it at 190°C (375°F) for 12–15 minutes.
- To make the dressing, combine the diced red onion, chopped cilantro, olive oil, vinegar, sugar, salt, pepper, and chili flakes (if using). Stir well and let it sit for 10 minutes so the flavors can develop.
- Spread a generous layer of vegetable purée onto each plate. Place the fish on top and spoon plenty of the cilantro vinaigrette over everything.
Serving Suggestions
This dish doesn’t need much else, but it pairs wonderfully with steamed green beans, asparagus, broccoli, or a crisp green salad. A chilled glass of dry white wine is also an excellent match.
Tips
- Cod, hake, halibut, trout, or sea bass all work beautifully in this recipe.
- For an extra silky purée, pass it through a fine sieve after blending.
- The vinaigrette can be prepared 30 minutes in advance—the onion softens slightly and becomes even more flavorful.
- If you love citrus, finish the fish with a little lemon zest for extra freshness.
Soft, creamy, fresh, and full of bright flavors, this is comfort food that feels both elegant and incredibly satisfying.
