Draniki with Sprats

Draniki with Sprats

Crispy golden potato pancakes topped with smoky sprats, cool sour cream, fresh arugula, and a sprinkle of smoked paprika. It may sound like an unusual combination, but the rich flavor of the sprats pairs beautifully with the crispy potatoes. This comforting Eastern European dish is simple to prepare and perfect for breakfast, brunch, or a light dinner.

Ingredients

For the Draniki

  • 4 medium potatoes (about 700 g)
  • 1 small onion
  • 1 large egg
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • Vegetable oil, for frying

For Serving

  • 1 can sprats in oil
  • 150 g sour cream
  • A handful of fresh arugula
  • Smoked paprika
  • Fresh dill or chives (optional)

Instructions

  1. Peel the potatoes and onion. Grate both on the fine side of a box grater.
  2. Transfer the mixture to a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step helps the draniki become beautifully crispy.
  3. Place the drained potato mixture in a bowl. Add the egg, flour, salt, and black pepper. Mix until evenly combined.
  4. Heat a thin layer of vegetable oil in a large frying pan over medium-high heat.
  5. Spoon portions of the mixture into the pan and flatten slightly with the back of the spoon. Fry for about 3–4 minutes per side, or until deeply golden and crisp. Transfer to paper towels while cooking the remaining pancakes.
  6. Arrange the warm draniki on serving plates. Top with a generous spoonful of sour cream, then place the sprats over the pancakes.
  7. Finish with fresh arugula, a light dusting of smoked paprika, and, if desired, chopped dill or chives. Serve immediately while the pancakes are still crispy.

Tips

  • Squeeze the grated potatoes thoroughly—removing excess moisture is the secret to crispy draniki.
  • Serve immediately after frying for the best texture.
  • If you enjoy extra flavor, add a squeeze of fresh lemon juice over the sprats before serving.
  • Fresh dill, chives, or finely sliced green onions make an excellent finishing touch.

Serving Suggestions

These draniki pair wonderfully with a simple green salad, pickled cucumbers, or lightly salted vegetables. They also make an excellent brunch served alongside soft-boiled or poached eggs.
