Oven-Baked Red Mullet

Red mullet

Red mullet is one of those fish that rewards your patience. Cleaning it can feel like a never-ending job, but once you take that first bite, you’ll immediately understand why it’s worth every minute. Lightly coated in flour and baked until golden, the fish becomes wonderfully crispy on the outside while staying juicy and tender inside. With nothing more than garlic, herbs, olive oil, and a squeeze of fresh lemon, this simple Mediterranean-style recipe lets the flavor of the fish shine.

Ingredients

  • 500–700 g red mullet, cleaned and gutted
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 3–4 garlic cloves, lightly crushed
  • 4–5 sprigs fresh thyme or rosemary
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 lemon, cut into wedges
  • Fresh parsley (optional, for serving)

Instructions

  1. Preheat the oven to 200°C (390°F). Line a baking tray with parchment paper or lightly grease it with olive oil.
  2. Pat the cleaned red mullet completely dry using paper towels. This helps the flour stick and creates a crispier crust.
  3. Season the fish generously with salt and freshly ground black pepper on both sides.
  4. Lightly coat each fish in flour, shaking off any excess.
  5. Arrange the fish on the prepared baking tray. Drizzle with olive oil and scatter the crushed garlic cloves and fresh thyme (or rosemary) around the fish.
  6. Bake for 15–18 minutes, depending on the size of the fish, until the skin is golden and slightly crispy and the flesh flakes easily with a fork.
  7. Serve immediately with fresh lemon wedges and sprinkle with chopped parsley if desired.

Serving Suggestions

This dish is perfect with a simple tomato salad, roasted potatoes, grilled vegetables, or a crisp green salad. A chilled glass of dry white wine also pairs beautifully with the delicate flavor of the fish.

Tips

  • Drying the fish well before coating it in flour is the key to getting a crispy finish.
  • Don’t overbake—red mullet cooks very quickly and stays much juicier when removed from the oven as soon as it’s done.
  • You can add a pinch of smoked paprika or dried oregano to the flour for extra flavor.
  • If you’re cooking larger fish, simply add another 3–5 minutes to the baking time.

Crispy, fragrant, and incredibly flavorful, this oven-baked red mullet proves that sometimes the simplest recipes are the most satisfying—even if cleaning the fish tests your patience first.
