Bibim Guksu (Spicy Korean Cold Noodles)

Bibim Guksu

Bibim Guksu is one of the most refreshing Korean noodle dishes for hot weather. Thin noodles are coated in a sweet, spicy, tangy sauce and topped with crunchy cucumber and boiled eggs.

It’s light, addictive, and comes together surprisingly fast. The sauce is the real star here: spicy from gochujang, slightly sweet, garlicky, and perfectly balanced with vinegar and sesame oil.

Ingredients

For the noodles

  • 250 g thin wheat noodles (somyeon)
  • 1 cucumber, julienned
  • 2 boiled eggs

For the sauce

  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sugar or honey
  • 1 tsp sesame oil
  • 1 garlic clove, grated
  • 1 tsp gochugaru, optional

Instructions

  1. Cook the noodles according to package instructions until just tender.
  2. Rinse them very well under cold water until completely chilled. This step is important for the chewy texture.
  3. In a bowl, mix gochujang, soy sauce, vinegar, sugar, sesame oil, garlic, and gochugaru.
  4. Toss the cold noodles with the sauce until evenly coated.
  5. Plate the noodles and top with cucumber and halved boiled eggs.
  6. Serve immediately. You can also add sesame seeds or a little kimchi on the side.

Cold, spicy, slightly sweet, and incredibly satisfying — the perfect Korean summer comfort food.
