I don’t say this lightly, but these little mushroom bites are actual magic. No dough, no frying, no stress — just pure flavor.
Here’s what you do:
Take some mushroom caps (just the tops — save the stems for another time), give them a clean, and pop a little bit of shredded hard cheese into each one. Add a few tarragon leaves (don’t skip this, it makes everything fancy and herby and so good), then hit them with a pinch of flaky sea salt and freshly cracked black pepper.
Now the important part — pop them in the oven at 180°C (350°F) for about 20 minutes until they’re golden and bubbly and your kitchen smells like heaven.
Boom. Done. Serve them warm, serve them cold — they’re savory, juicy, salty, herby perfection.
10/10 would make again.
Ingredients:
- 12 large button mushrooms (stems removed, caps wiped clean)
- 100 g hard cheese (like aged cheddar, gruyère, or parmesan), grated
- A handful of fresh tarragon leaves
- 1 tbsp olive oil
- Flaky sea salt (to taste)
- Freshly ground black pepper (to taste)
Instructions:
- Preheat your oven to 200°C (390°F).
- Gently clean the mushroom caps with a damp cloth or paper towel. Remove the stems and place the caps on a baking tray lined with parchment paper, hollow side up.
- Add a pinch of grated cheese into each cap — don’t overfill, just enough to cover the base. Tuck a couple of fresh tarragon leaves on top of the cheese.
- Lightly drizzle the caps with olive oil. Sprinkle generously with flaky sea salt and freshly ground black pepper.
- Slide the tray into the preheated oven and bake for 15–20 minutes, or until the cheese is melted, golden, and bubbly, and the mushrooms are juicy and tender.
- Transfer to a serving plate and enjoy warm — they’re perfect as a light starter, a party bite, or a quick, savory snack.
