As a caramel-lover, this dish hits the same spot — but in savory form. The eggplant turns silky-soft in the oven, soaking up a glossy miso glaze that’s equal parts salty, sweet, and umami-rich. It’s sticky, deep, and a little addictive — like miso meeting toffee in a secret late-night affair.
Paired with a tangle of rice noodles, it’s pure comfort disguised as elegance — the kind of meal that makes you close your eyes after the first bite and just breathe it in.
Perfect for cozy evenings, glass of wine in hand, and zero regrets.
Ingredients (for 2 servings)
For the eggplant:
- 2 medium eggplants (preferably Japanese or Italian)
- 1 tbsp neutral oil (like sesame or sunflower)
For the miso glaze:
- 1 ½ tbsp white miso paste
- 1 tbsp soy sauce
- 1 tbsp mirin (or rice vinegar + ½ tsp sugar)
- 1 tsp honey or maple syrup
- 1 tsp sesame oil
- 1 small clove garlic, grated
- ½ tsp grated ginger
- Optional: a pinch of chili flakes for heat
To serve:
- Rice noodles or steamed rice
- Sesame seeds
- Chopped scallions or cilantro
- A squeeze of lime or lemon (optional)
Instructions
- Prep the eggplants
Cut the eggplants in half lengthwise. Score the flesh in a criss-cross pattern without cutting through the skin. Brush with a little oil. - Roast the base
Place the eggplants cut side up on a baking tray and roast at 200°C (400°F) for about 20 minutes, until tender and slightly golden. - Make the miso glaze
In a small bowl, whisk together miso paste, soy sauce, mirin, honey, sesame oil, garlic, and ginger until smooth and glossy. - Glaze & bake again
Brush the roasted eggplants generously with the miso glaze. Return to the oven and bake for another 10–12 minutes, until the top is sticky, caramelized, and slightly bubbling. - Serve & enjoy
Top with sesame seeds, scallions, and a little chili if you like it spicy.
Serve warm with rice noodles or fluffy jasmine rice — and maybe a glass of wine 🍷
Tips
- Want it richer? Add a spoon of tahini to the glaze.
- Want it lighter? Replace honey with orange juice for a citrusy twist.
- It also tastes amazing the next day cold, sliced into a salad or bowl.
