Sometimes, breakfast deserves to be bold. I said it and I stand on business! This plate is the ultimate morning comfort: crispy chickpeas tossed with adjika and za’atar, a couple of soft eggs, silky salted salmon, fresh herbs, and a spoonful of Greek yogurt to tie it all together. It’s spicy, cozy, hearty — exactly the kind of breakfast that makes you feel like the day is already a win.
Ingredients (2 servings):
For the spiced chickpeas:
- 1 can (400 g) cooked chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 tsp adjika paste (or ½ tsp chili paste + pinch of smoked paprika)
- 1 tsp za’atar
- Salt and pepper to taste
For the eggs & toppings:
- 4 eggs (soft-boiled or poached — your choice)
- 150 g salted or smoked salmon, thinly sliced
- 3 tbsp Greek yogurt
- A handful of fresh herbs (dill, parsley, cilantro — mix to taste)
- Olive oil for drizzling
- Lemon wedges (optional, for brightness)
Instructions:
Step 1: Roast or sauté the chickpeas
- Heat olive oil in a skillet over medium heat.
- Add the chickpeas and sauté for 5–6 minutes until golden and slightly crisp.
- Stir in adjika and za’atar. Mix well to coat every chickpea.
- Season with salt and pepper, then cook another 1–2 minutes until aromatic.
(Tip: you can also roast the chickpeas in the oven at 200°C for 20–25 minutes for extra crunch.)
Step 2: Cook the eggs
- Soft-boiled option: bring a small pot of water to a gentle boil, add eggs, cook for 6½ minutes, then cool in ice water and peel.
- Poached option: simmer water with a splash of vinegar, swirl gently, and poach each egg for 3 minutes for a soft center.
Step 3: Assemble your breakfast bowl
- Spoon the warm spiced chickpeas into shallow bowls.
- Add the eggs on top, then tuck in slices of salted salmon.
- Drop a generous spoonful of Greek yogurt in the center.
- Scatter fresh herbs over everything, drizzle with olive oil, and finish with a squeeze of lemon if desired.
Serving idea:
Serve with warm pita, sourdough toast, or lavash for dipping into the yolk and yogurt.
Pair it with strong coffee or mint tea — and take a victory bite.
This breakfast is spicy, creamy, salty, and tangy all at once — the kind of plate that wakes you up and cheers you on.
Adjust the heat by playing with adjika intensity or adding a drizzle of honey for a sweet kick.
