Soft inside, golden outside, lightly sweet and incredibly comforting — these are the syrniki you want to wake up for.
Ingredients
- 500 g farmer’s cheese (tvorog), well-drained
- 1 egg
- 1 tbsp sugar
- 2–3 tbsp semolina
- Pinch of salt
- Vanilla (optional)
- Flour, for coating
Step-by-Step Instructions
- Place the tvorog in a bowl. If it’s grainy, mash it lightly with a fork or pass it through a sieve for a smoother texture.
- Mix the dough. Add the egg, sugar, salt, semolina, and vanilla (if using).
- Mix until combined: the mixture should be soft but hold together.
- Let it rest for 10–15 minutes so the semolina absorbs moisture and firms up the dough.
- Shape the syrniki. Lightly flour your hands. Take small portions and form thick, round patties.
- Coat each one lightly in flour, this helps create that perfect golden crust.
- Heat a pan over medium heat with a little oil or butter.
- Cook the syrniki for 3–4 minutes per side until golden brown and cooked through.
- Avoid high heat, you want them soft inside, not dry.
How to Serve
Serve warm with:
- sour cream
- jam (fig jam = next level)
- honey or fresh berries
Tips for Perfect Syrniki
- Use dry, high-fat farmer’s cheese
- Don’t add too much flour to the dough (only for coating)
- Let the mixture rest: semolina does the magic
- Keep them thick for a soft center
