This is my easy, absolutely fool-proof version you can make in under 10 minutes.
Ingredients (2 servings)
- 2 corn tortillas
- 2 eggs (preferably with bright, runny yolks)
- ½ cup warm tomato salsa or ranchera salsa
- ¼ cup guacamole (or 1 mashed avocado with lime & salt)
- 2 tbsp sour cream or Greek yogurt
- 2–3 tbsp finely chopped red onion
- A handful of fresh cilantro
- ½ lime, cut into wedges
- Salt & black pepper, to taste
- Optional: refried beans, crumbled cheese (cotija/feta), extra chili
How to Make Huevos Rancheros
1. Warm the Tortillas
Heat each tortilla in a dry skillet for 30–40 seconds per side until soft and pliable.
If you want a crispier base, add a touch of oil and lightly fry until golden at the edges.
2. Heat the Salsa
Warm your salsa in a small pan.
Homemade or store-bought both work — warm salsa brings the whole dish together.
3. Fry the Eggs
Add a little oil to a pan and fry the eggs sunny-side-up.
Season with salt and pepper.
The goal: a set white and a runny yolk.
4. Assemble the Dish
Place the warm tortilla on a plate.
Spoon some salsa on top.
Add the fried egg right in the center.
Finish with dollops of guacamole, sour cream, chopped red onion, and fresh cilantro.
5. Add the Final Touch
Squeeze a little lime over everything before eating.
Serve immediately while the tortilla is warm and the egg is silky.
Serving Tips
- For a heartier plate, spread a thin layer of refried beans under the salsa.
- Add crumbled cotija or feta for extra saltiness.
- Want more spice? Top with jalapeños or a drizzle of chipotle sauce.
- Perfect with hot coffee or iced matcha.
