Beet & Tuna Pasta Recipe

Beet-Tuna-pasta

Well, technically we are looking at Beet & Tuna PASTA – since, when you suddenly find yourself with three kilos of beets (thanks to my guy’s ambitious grocery haul), creativity in the kitchen becomes mandatory. The idea was to make something that feels hearty, colorful, and just a little unexpected. Beets bring this gorgeous magenta hue and a natural sweetness, while tuna adds protein and a touch of saltiness that balances everything out. Tossed with pasta, it turns into the kind of dish that looks like it came straight from a fancy bistro, but is actually made from pantry staples. Bright, filling, and definitely a fun way to turn beet overload into dinner magic!

Ingredients (2–3 servings):

  • 250 g (about 9 oz) pasta (spaghetti or penne work great)
  • 2 medium beets, roasted or boiled until tender
  • 1 can tuna in olive oil (drained, but save a little oil for flavor)
  • 2 cloves garlic
  • 2 tbsp olive oil
  • Juice of half a lemon
  • 2 tbsp Greek yogurt or crème fraîche (optional, for creaminess)
  • Salt & black pepper, to taste
  • Fresh parsley or dill, chopped (for garnish)
  • Grated parmesan or feta (optional, for serving)

Instructions:

  1. Cook the pasta according to package directions. Reserve ½ cup of pasta water, then drain.
  2. While pasta cooks, peel the cooked beets and blend them into a smooth puree with garlic, olive oil, lemon juice, and a splash of pasta water. Season with salt and pepper.
  3. In a large pan, warm the beet sauce gently, then stir in tuna (flaked into chunks).
  4. Add the cooked pasta, tossing until fully coated. If you want it creamier, stir in Greek yogurt or crème fraîche at this stage.
  5. Adjust seasoning and add more lemon juice if needed.
  6. Serve topped with fresh herbs and optional cheese.

Pasta that’s bright magenta, hearty from the tuna, and just tangy-creamy enough to keep every bite exciting.
