Potato Vareniki

Potato vareniki

There is something incredibly calming about making vareniki from scratch.
Roll the dough, cut the circles, add the filling, fold, pinch, repeat.
It is simple, repetitive, and somehow very meditative.

Potato vareniki are one of those comfort foods that feel like home:
soft dough, a creamy potato filling, a little butter, fresh dill,
and plenty of sour cream on the side.

And in our kitchen, there is one very important extra step:
my man gives some of them tiny little eyes.
Apparently, regular dumplings are simply not enough.

Ingredients

For the dough

  • 300 g all-purpose flour
  • 150 ml warm water
  • 1 tbsp vegetable oil
  • 1/2 tsp salt

For the potato filling

  • 500 g potatoes
  • 1 onion, finely chopped
  • 1 tbsp butter
  • Salt, to taste
  • Black pepper, to taste

For serving

  • Butter
  • Sour cream
  • Fresh dill
  • Chili flakes, optional

How to Make Potato Vareniki

  1. Make the filling.
Boil the potatoes in salted water until completely soft.
Drain well and mash until smooth.
  2. Fry the chopped onion in butter until soft and golden.
Mix it into the mashed potatoes and season with salt and black pepper.
    Let the filling cool.
  3. Make the dough.
Combine the flour and salt in a bowl.
Add the warm water and vegetable oil and mix until a dough forms.
  4. Knead for about 7–10 minutes, until smooth and elastic.
Cover and let it rest for 20–30 minutes.
  5. Roll the dough out thinly and cut it into circles using a glass or round cutter.
  6. Place a spoonful of potato filling in the center of each circle.
Fold into a half-moon and pinch the edges firmly to seal.
  7. Bring a large pot of salted water to a gentle boil.
    Cook the vareniki in batches.
Once they float to the surface, cook for another 2–3 minutes.
  8. Remove with a slotted spoon and toss gently with butter so they do not stick together.

To Serve

Serve the vareniki hot with a generous spoonful of sour cream,
plenty of fresh dill, and a little chili if you like.

Soft, cozy, comforting — and strangely therapeutic to make.
Fold, pinch, repeat.
