Miso Roasted Cauliflower with Creamy Hummus-Lime Sauce

Miso-Roasted-Cauliflower

This roasted cauliflower is packed with umami flavor from miso paste and served over a creamy sauce made with hummus, Greek yogurt, and fresh lime juice. It’s simple, healthy, and makes a perfect vegetarian main course or side dish.

Ingredients

For the cauliflower

  • 1 large head cauliflower, cut into florets
  • 2 tbsp white miso paste
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp honey or maple syrup
  • 1 tbsp water
  • Freshly ground black pepper

For the hummus-lime sauce

  • 150 g hummus
  • 150 g Greek yogurt
  • Juice of 1 lime
  • 1 small garlic clove, grated (optional)
  • 2–3 tbsp water, if needed
  • Salt and black pepper, to taste

For serving

  • Fresh dill, chopped
  • Green onions, sliced
  • Lime wedges

Instructions

  1. Preheat the oven to 220°C (425°F).
  2. In a large bowl, whisk together the miso paste, olive oil, soy sauce, honey, and water until smooth.
  3. Add the cauliflower florets and toss until evenly coated.
  4. Spread the cauliflower on a baking sheet in a single layer.
  5. Roast for 25–30 minutes, turning once halfway through, until golden brown and slightly caramelized around the edges.
  6. Meanwhile, prepare the sauce. In a bowl, combine the hummus, Greek yogurt, lime juice, and garlic. Mix until smooth.
  7. Add a splash of water if needed to create a creamy, spoonable consistency. Season with salt and pepper to taste.
  8. Spread the hummus-lime sauce onto a serving plate or shallow bowl.
  9. Pile the roasted cauliflower on top and finish with fresh dill and green onions.
  10. Serve warm with extra lime wedges on the side.

Tips

  • White miso gives a milder flavor, but red miso works too for a deeper, richer taste.
  • The sauce can be made ahead and stored in the refrigerator for up to 3 days.
  • Add toasted nuts or chickpeas for extra crunch.
