Perfect Syrniki (Cottage Cheese Pancakes)

Syrniki

Soft inside, golden outside, lightly sweet and incredibly comforting — these are the syrniki you want to wake up for.

Ingredients

  • 500 g farmer’s cheese (tvorog), well-drained
  • 1 egg
  • 1 tbsp sugar
  • 2–3 tbsp semolina
  • Pinch of salt
  • Vanilla (optional)
  • Flour, for coating

Step-by-Step Instructions

  1. Place the tvorog in a bowl. If it’s grainy, mash it lightly with a fork or pass it through a sieve for a smoother texture.
  2. Mix the dough. Add the egg, sugar, salt, semolina, and vanilla (if using).
  3. Mix until combined: the mixture should be soft but hold together.
  4. Let it rest for 10–15 minutes so the semolina absorbs moisture and firms up the dough.
  5. Shape the syrniki. Lightly flour your hands. Take small portions and form thick, round patties.
  6. Coat each one lightly in flour, this helps create that perfect golden crust.
  7. Heat a pan over medium heat with a little oil or butter.
  8. Cook the syrniki for 3–4 minutes per side until golden brown and cooked through.
  9. Avoid high heat, you want them soft inside, not dry.

How to Serve

Serve warm with:

  • sour cream
  • jam (fig jam = next level)
  • honey or fresh berries

Tips for Perfect Syrniki

  • Use dry, high-fat farmer’s cheese
  • Don’t add too much flour to the dough (only for coating)
  • Let the mixture rest: semolina does the magic
  • Keep them thick for a soft center
