These crispy potato patties with oyster mushrooms are one of those simple recipes that taste way better than expected. Soft on the inside, golden on the outside, with a rich, savory mushroom filling — I keep coming back to them again and again 🤍
Ingredients:
- 500 g potatoes
- 200–250 g oyster mushrooms
- 1 small onion
- 1 egg
- 2–3 tbsp flour
- salt, pepper
- 1–2 cloves garlic (optional)
- 1–2 tbsp soy sauce
- oil for frying
For serving:
green onions, chili flakes, sour cream or yogurt
Instructions:
- Boil the potatoes until soft, mash them, and let them cool slightly.
Meanwhile, finely chop the oyster mushrooms and sauté them with onion until golden. Add garlic, salt, pepper, and a splash of soy sauce, then cook until all the liquid is gone. - Mix the mashed potatoes with egg, flour, and a bit of salt until you get a soft dough that holds its shape. Take a portion, flatten it, add the mushroom filling inside, and shape into patties.
- Fry them on medium heat until golden and crispy on both sides.
Serve with sour cream or yogurt, green onions, and a pinch of chili flakes — and try not to eat them all straight from the pan.
