Shrimp-Congee with Dashi & Turmeric

Shrimp-Congee with Dashi & Turmeric

Silky, umami-packed comfort bowl with a smoky twist

If you think congee is just “sick-day rice,” this version will change your mind.
Dashi brings depth, turmeric adds warmth and color, and shrimp + mushrooms make it feel like a full, restaurant-level dish.

Ingredients (2 servings)

Base:

  • 100 g (½ cup) short-grain rice
  • 800 ml dashi broth (or water + dashi powder)
  • 1/4 tsp turmeric
  • 1–2 cups water (as needed)
  • pinch of salt

Toppings:

  • 150–200 g shrimp (peeled & deveined)
  • 3–4 shiitake mushrooms (sliced)
  • a handful of fresh sprouts (mung bean or similar)
  • 1–2 sheets nori (cut into thin strips)

To finish:

  • 1–2 tbsp soy sauce
  • a few drops of chipotle Tabasco

Instructions

  1. Rinse the rice until the water runs mostly clear.
  2. Add it to a pot with dashi and turmeric.
  3. Bring to a gentle boil, then reduce to low heat.
  4. Let it simmer for 30–40 minutes, stirring occasionally. The goal: the grains should break down and release starch, turning the mixture into a creamy porridge. If it gets too thick, add water.
  5. While the congee cooks:
  • Sauté shrimp in a hot pan for 1–2 minutes per side until just cooked
  • Remove and set aside
  • In the same pan, cook shiitake until soft and slightly caramelized

Don’t overcook shrimp, they should stay juicy and tender.

6. Pour the congee into bowls.

      Top with:

      • shrimp
      • shiitake
      • fresh sprouts
      • crispy nori strips

Drizzle soy sauce over the bowl and add a few drops of chipotle Tabasco.

      Why this works

      • Dashi = deep umami backbone
      • Turmeric = warmth + subtle earthiness + color
      • Rice starch = natural creaminess without cream
      • Shrimp + mushrooms = sweet + savory balance
      • Chipotle Tabasco = smoky contrast that lifts everything

      Pro tips

      • Want it richer? Add a soft egg or egg yolk on top
      • Want more depth? Finish with a few drops of sesame oil
      • Want extra texture? Add crispy garlic or fried shallots
