Mashed Potato & Pea Purée

Mashed Potato & Pea Purée

I will not lie, naming this side dish felt dramatic for something so simple. But we’re calling it: Mashed Potato & Pea Purée, Fancy-But-Easy Edition. Because, let’s be honest, it’s mashed potatoes… but it’s also kind of a celebration. A little sweet, a little earthy, super creamy, and with that soft green hue that says “I care, but not too much.”

This is my go-to side for fish when I want the plate to look elegant but still feel like comfort food. The frozen peas? Total heroes. No shelling, no fuss. Just blend them into the fluffy potatoes with some butter, a touch of cream, salt, and a squeeze of lemon — and suddenly you’re 10% more French and 100% more satisfied.

Ingredients:

  • 4 medium potatoes, peeled and chopped
  • 1 cup frozen green peas
  • 2–3 tbsp unsalted butter
  • 2–4 tbsp heavy cream or milk (adjust for texture)
  • Salt, to taste
  • Juice of ½ lemon
  • Optional: a few fresh mint leaves or chives for garnish

Instructions:

  1. Boil the potatoes in salted water until tender (about 15–20 minutes).
  2. While the potatoes are cooking, blanch the frozen peas in boiling water for 2 minutes, then drain.
  3. Mash the potatoes with butter, cream, and salt until smooth and fluffy.
  4. In a blender or with an immersion blender, blend the peas with a splash of cream and lemon juice until smooth.
  5. Fold the pea purée into the mashed potatoes until the color is dreamy and pale green.
  6. Taste and adjust salt or lemon if needed.
  7. Serve warm with your favorite fish, and maybe a flourish of herbs on top to make it feel extra.

Looks elegant. Tastes like home.
