Looking for a lighter, low-carb alternative to traditional pizza? Try these delicious eggplant pizzas — simple, flavourful, and satisfying!
Ingredients:
- 2 large eggplants
- Salt
- Olive oil
- Homemade tomato sauce (made with sautéed onion, tomatoes, garlic, pepper, and spices)
- Smoked beef
- Shredded cheese (mozzarella or your favourite mix)
- Fresh herbs (like parsley or basil) for garnish
Instructions:
- Slice the eggplants lengthwise into 1–1.5 cm thick slices. Sprinkle each slice with salt and let them rest for about 20 minutes. This helps to draw out any bitterness.
- Rinse off the salt and pat the slices dry with a paper towel. Arrange them on a baking tray, brush lightly with olive oil, and bake in a preheated oven at 200°C (390°F) for about 15 minutes until they’re just tender.
- Spoon a layer of your homemade tomato sauce over each eggplant slice. Add smoked beef on top, then generously sprinkle with shredded cheese.
- Return the tray to the oven and bake for another 10–12 minutes, or until the cheese is melted and golden.
- Before serving, sprinkle the eggplant pizzas with fresh chopped herbs for an extra burst of freshness and colour.
Enjoy your delicious, veggie-based pizza alternative — crispy on the edges, hearty in the middle, and full of rich flavour!
