Georgian Egg Soup — Light, Silky & Comforting
If you’ve never tried Georgian chikhirtma, imagine the most delicate chicken soup — but elevated. No noodles, no cream — just silky egg ribbons, fragrant broth, and bright herbs.
This version includes potatoes for extra heartiness, making it a cozy, nourishing bowl perfect for colder days or whenever you need comfort food that still feels light.
What Is Chikhirtma?
Chikhirtma is a traditional Georgian soup thickened with eggs and gently acidified with lemon juice or wine vinegar. Unlike typical egg-drop soups, the eggs are whisked with acid before being added, which prevents curdling and creates a beautifully smooth texture.
It’s simple, elegant, and surprisingly refined.
Ingredients (2–3 servings)
For the soup:
- 1–1.2 L good-quality chicken broth
- 2–3 medium potatoes, diced into small cubes
- 2–3 eggs
- 1 small onion, finely chopped
- 1–2 garlic cloves, minced
- 20–30 g butter
- 1 tsp flour (optional, for extra body)
- 1–2 tbsp fresh lemon juice or white wine vinegar
- Salt and freshly ground black pepper, to taste
- A pinch of turmeric or saffron (optional, for warmth and color)
- A generous handful of fresh cilantro, finely chopped
Step-by-Step Instructions
- Bring the chicken broth to a gentle simmer. Add the diced potatoes and cook until tender (about 10–15 minutes).
- In a separate pan, melt the butter over medium-low heat.
Add the onion and cook gently until soft and translucent — do not brown. The goal is sweetness, not caramelization. - If using flour, stir it in and cook for about 1 minute to remove the raw taste. This will give the soup slightly more body.
- Add the onion mixture to the broth with the potatoes. Lower the heat — the soup should be hot but not boiling.
- In a bowl, whisk the eggs with lemon juice or vinegar until fully combined.
Slowly pour the egg mixture into the soup while stirring constantly. This creates delicate, silky ribbons and prevents scrambling. - Keep the heat low — never let the soup boil at this stage.
- Add garlic, black pepper, and turmeric or saffron (if using).
Warm gently for 1–2 minutes. - Turn off the heat, stir in lots of fresh cilantro, and let the soup rest for about 5 minutes before serving.
Serving Suggestions
Serve hot with:
- Fresh crusty bread
- Lavash
- Or simply on its own as a light but deeply satisfying meal
This soup is especially comforting on rainy days or when you need something soothing but not heavy.
Tips for Perfect Chikhirtma
✔ Always lower the heat before adding eggs.
✔ Acid (lemon or vinegar) is essential — it stabilizes the eggs.
