Date & Pecan Energy Balls

Sometimes the best desserts are the ones that require absolutely no baking. These soft, naturally sweet energy balls taste almost like caramel thanks to the dates, while toasted pecans add a rich buttery flavor. Coconut gives them that perfect tropical finish and a slightly chewy texture.

They’re ideal with coffee, after the gym, or when you want something sweet but still relatively wholesome.

Ingredients

  • 250 g soft dates, pitted
  • 120 g pecans
  • 40 g unsweetened shredded coconut
  • Extra coconut for coating
  • Pinch of sea salt
  • Optional: 1 tsp vanilla extract

Instructions

  1. Lightly toast the pecans in a dry pan for 3–4 minutes until fragrant. Let cool slightly.
  2. Add the dates, pecans, coconut, salt, and vanilla to a food processor. Blend until the mixture becomes sticky and holds together when pressed.
  3. If the mixture feels too dry, add 1–2 teaspoons of warm water.
  4. Roll the mixture into small balls with your hands.
  5. Coat each ball in extra shredded coconut.
  6. Refrigerate for at least 30 minutes before serving.

Tips

  • Add a little cinnamon or cardamom for a warmer flavor.
  • A spoon of cocoa powder makes them taste like chocolate truffles.
  • Store in the fridge for up to 1 week.

Soft, chewy, nutty and naturally sweet — the perfect little homemade snack.
