It’s no secret that noodles are pure comfort food, and honestly, there’s nothing better than a bowl that’s equal parts hearty, spicy, and just a little bit creamy. This recipe is everything I want in a weeknight dinner: earthy soba noodles, rich seared tuna, smoky green peppers, and the umami punch of soy and oyster sauce. The chili adds just the right amount of heat, while a spoonful of tahini melts in to make the sauce silky and addictive.
What I love is that it’s fast, flexible, and feels special without trying too hard. You can top it with black sesame and scallions for crunch, or even swap in salmon if tuna isn’t your thing. Think of it as a 20-minute dinner that tastes like you put in an hour—balanced, bold, and unapologetically satisfying.
Ingredients:
- 200g soba noodles
- 1 fresh tuna steak
- 1 green pepper, sliced
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- ½ tsp chili flakes (or to taste)
- 1 tbsp tahini
- Black sesame seeds, for garnish
- 2 scallions, finely sliced
Instructions:
- Cook soba noodles according to package directions. Drain and set aside.
- Slice the tuna steak into bite-size chunks. Sear quickly in a hot pan until browned outside but still tender inside. Remove and set aside.
- In the same pan, sauté green pepper until slightly charred.
- Add soy sauce, oyster sauce, chili, and tahini. Stir until creamy and glossy.
- Toss in the soba noodles and tuna. Mix gently to coat.
- Serve warm, topped with black sesame seeds and scallions.
