Yellow Watermelon Salad with Mozzarella & Arugula

Yellow Watermelon Salad with Mozzarella & Arugula

Sweet, juicy yellow watermelon, creamy mozzarella, peppery arugula — that’s my kind of summer luxury. A quick toss with olive oil, roasted seeds, and a hint of basil… and suddenly it feels like lunch in the Mediterranean. Simple, bright, and totally irresistible.

Ingredients:

  • 2 cups yellow watermelon, cut into cubes
  • A handful of arugula
  • 8–10 mini mozzarella balls
  • A few strips of purple basil (or regular basil)
  • 1–2 tbsp pumpkin seeds
  • Olive oil – 1 tbsp
  • Lemon juice – 1 tbsp
  • Salt & black pepper – to taste
  • Optional: a pinch of chili flakes for extra flavor

Instructions:

  1. Prepare the base:
Spread the arugula evenly on a plate or in a bowl.
  2. Add yellow watermelon:
Arrange the cubes on top of the greens.
  3. Add the mozzarella:
Place the mini mozzarella balls between the watermelon pieces.
  4. Add basil:
Slice the purple basil into thin strips and scatter over the salad.
  5. Sprinkle the seeds:
    Add pumpkin seeds for crunch.
  6. Season:
Drizzle with olive oil and lemon juice.
Add salt, black pepper, and chili flakes to taste.
  7. Serve immediately:
Best enjoyed fresh and cold — super refreshing!
