Vietnamese Bánh Xèo

Vietnamese Bánh Xèo (Shrimp-Only Crispy Pancake)

It recently occurred to me that Vietnamese Bánh Xèo is basically a giant crispy pancake that says, “Forget the forks — just roll me up and dip me.” It’s golden, loud (yes, it crackles), and packed with herbs and flavor bombs. The shrimp-only version is lighter but just as punchy. If you’re the kind of person who wants lunch to feel like a small adventure — this is for you.

I won’t pretend this is elegant food. It’s wrap-it-in-lettuce, sauce-down-your-arm, standing-at-the-counter kind of food. Lazy but joyful. Perfectly chaotic.

For the batter:

  • 1 cup rice flour
  • 1 ½ tsp turmeric powder
  • ½ tsp salt
  • 1 ½ cups cold water
  • ½ cup coconut milk
  • Optional: chopped green onions for the batter

For the filling:

  • 200–250 g shrimp, peeled, deveined, tails off
  • 1 small onion, thinly sliced
  • A big handful of bean sprouts

To serve:

  • Large lettuce leaves
  • Lots of fresh herbs: mint, Thai basil, cilantro, perilla
  • Nước chấm (Vietnamese dipping sauce – see below)

How to make it:

  1. Whisk together the batter ingredients and let it rest 30–60 minutes.
  2. Cook the shrimp in a bit of oil with the onions until pink and just cooked. Set aside.
  3. Heat a nonstick pan, add a small splash of oil, pour in a thin layer of batter, and swirl it around.
  4. Add a few shrimp, some onions, and bean sprouts to one half of the pancake.
  5. Cover with a lid for a minute or two to steam it slightly.
  6. Uncover and cook until crispy and golden, then fold in half and slide it onto a plate.
  7. Repeat with more batter and shrimp until you run out.

How to eat it:

Tear off a piece, wrap it in a lettuce leaf with herbs, dunk in nước chấm, try not to make a mess (fail, happily).

Nước Chấm (dipping sauce):

  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 3 tbsp water
  • 1 tbsp sugar
  • 1 garlic clove, minced
  • 1 chili, thinly sliced

Stir until sugar dissolves. Adjust to taste — it should be balanced: salty, sour, sweet, a little heat.
