This pear, blue cheese, and cottage cheese lavash pie is one of those recipes that feels almost too easy for how good it tastes. You only need a sheet of lavash, a creamy cottage cheese filling, a ripe pear, salty blue cheese, and a little honey.
The lavash turns golden and crisp in the oven, while the filling stays soft and creamy. Sweet pear, tangy blue cheese, and a touch of honey make this pie perfect for breakfast, brunch, a light lunch, or even as an easy appetizer with wine.
Ingredients
- 1 sheet lavash
- 200 g cottage cheese or ricotta
- 1 egg
- 1 ripe pear, thinly sliced
- 40–50 g blue cheese, crumbled
- 1 tbsp honey
- 2–3 tbsp milk
- A pinch of salt, optional
- Freshly ground black pepper, optional
- Butter or olive oil, for greasing the baking dish
Instructions
- Preheat the oven to 180°C (350°F).
- Lightly grease a small baking dish with butter or olive oil.
- In a bowl, mix the cottage cheese or ricotta with the egg and milk until creamy. The mixture should be soft and spreadable, but not too runny.
- Season the filling with a small pinch of salt and black pepper if desired. Be careful with the salt, as blue cheese is already quite salty.
- Place the sheet of lavash into the baking dish, letting the edges come up the sides. If the lavash is too large, gently fold the extra edges inward.
- Spread the cottage cheese mixture evenly over the lavash.
- Arrange the sliced pear on top of the filling.
- Sprinkle the crumbled blue cheese over the pear.
- Drizzle the honey over the top.
- Bake for about 30 minutes, or until the lavash is golden and crisp around the edges and the filling is set.
- Let the pie cool for 5–10 minutes before slicing.
- Serve warm or at room temperature.
Tips
- Use a ripe but firm pear so it holds its shape while baking.
- Ricotta will give the pie a smoother texture, while cottage cheese makes it slightly more rustic and higher in protein.
- If your cottage cheese is very dry, add an extra spoonful of milk.
- If your cottage cheese is very watery, drain it slightly before mixing.
- Walnuts, thyme, or a little lemon zest would also work beautifully in this recipe.
Serving Ideas
This lavash pie is delicious on its own, but it also pairs beautifully with a simple green salad, arugula, roasted vegetables, or a bowl of soup. For a brunch table, serve it alongside fresh fruit, olives, and extra honey on the side.
