There are some combos that just shouldn’t work… and yet here we are.
These cherry-glazed meatballs paired with spiced pumpkin pancakes were a total flavor curveball — and honestly? I’m obsessed. The sweet-tart cherry sauce clings to the juicy meatballs like a dream, and the pancakes are fluffy, savory, and just a little sweet in all the right places.
Not your usual dinner plate, but trust me: this one’s staying in the rotation. It’s weird in the best way.
This plate is the definition of cozy chaos — sweet, savory, rich, and just a little unexpected. Think: juicy baked beef meatballs glazed in cherry sauce, paired with spiced, thyme-roasted pumpkin pancakes made with chickpea flour. It’s not your usual dinner plate, but trust me — it works.
Ingredients
For the baked meatballs:
- 500g ground beef
- 1 small onion, finely chopped
- 2 garlic cloves, grated
- 1 egg
- 2–3 tbsp breadcrumbs or gluten-free oats
- Salt and black pepper, to taste
- Olive oil (for greasing the tray)
For the cherry sauce:
- 250g fresh or frozen pitted cherries
- 1–2 tbsp honey or brown sugar
- 1 tsp balsamic vinegar
- 2–3 tbsp water
- Pinch of salt
- 1 tsp cornstarch + 1 tbsp water (optional, for thickening)
For the pumpkin pancakes:
- 250g roasted pumpkin (baked with thyme, then mashed)
- 1 egg
- 100ml plant-based or regular milk
- 3–4 tbsp chickpea flour
- ½ tsp baking powder
- Salt, pepper, a pinch of cinnamon and nutmeg
- Oil for frying
Instructions
1. Bake the meatballs:
Preheat the oven to 190°C (375°F). In a bowl, mix the beef, onion, garlic, egg, breadcrumbs, salt, and pepper. Form into small meatballs and place on a greased or parchment-lined tray. Bake for 20–25 minutes until golden and cooked through.
2. Make the cherry sauce:
In a saucepan, combine the cherries, honey, balsamic vinegar, salt, and water. Simmer on medium heat for 10–15 minutes, until the cherries break down slightly and the sauce thickens. Stir in the cornstarch slurry if you want a thicker, glossy finish. Set aside.
3. Make the pancakes:
Roast pumpkin in advance at 180°C (350°F) with a sprig of thyme until tender, then scoop and mash. Mix pumpkin puree with egg, milk, spices, chickpea flour, and baking powder until you get a thick batter. Pan-fry in a little oil over medium heat until golden on both sides.
To Serve
Plate up 2–3 warm pancakes, add your baked meatballs on top or on the side, and drizzle generously with cherry sauce. Finish with some fresh thyme, a dollop of yogurt or crème fraîche if you like, and enjoy this beautiful flavor chaos.
