This is not your grandma’s beef stroganoff… well, okay, maybe it kind of is — rich, creamy, comforting — but there’s a sneaky little upgrade under the sauce that makes it lighter, smoother, and just a bit unexpected.
Cauliflower-Potato Mash
Light, velvety, and just the right touch of sweet.
Ingredients:
- 3 cups cauliflower florets
- 1 cup peeled and chopped potatoes
- 1–2 tbsp unsalted butter
- 1–2 tbsp milk or cream (optional, for extra creaminess)
- Salt & pepper to taste
Instructions:
- Boil the cauliflower and potatoes together in salted water until very tender — about 10–12 minutes.
- Drain well and let them sit in the pot for a minute or two to steam off excess moisture.
- Add butter, a splash of milk or cream (if using), salt and pepper.
- Mash it all together until smooth and creamy. You can use a hand blender if you like it extra silky.
Now for the classic beef stroganoff — no shortcuts, just good old-fashioned flavor:
Ingredients:
- 500g (about 1 lb) beef sirloin or rump, sliced into thin strips
- 1 onion, finely chopped
- 1 tbsp Dijon mustard
- 2 tbsp tomato paste
- 200ml (about ¾ cup) sour cream or crème fraîche
- 1 tbsp butter + 1 tbsp oil
- Salt & pepper to taste
Instructions:
- Heat butter and oil in a large skillet over medium-high heat.
- Sear the beef quickly in batches (don’t overcrowd the pan!), then set aside.
- In the same pan, cook the onions until soft.
- Stir in mustard, then add a couple of tablespoons of tomato paste. Let it simmer for a minute.
- Lower the heat and stir in sour cream. Return the beef to the pan, let it warm through, and season with salt and pepper.
To serve:
Spoon that beautiful, creamy cauliflower-potato mash onto plates, top with the rich stroganoff, and garnish with pickled cucumbers if you’re feeling fancy.
This dish is perfect for chilly evenings, cosy dinners, or honestly any time you want a little edible hug — with a twist.
