Traditional Georgian Chicken Satsivi

Satsivi is one of Georgia's most iconic dishes

Satsivi is one of Georgia’s most iconic dishes and a true celebration of walnuts. Tender chicken is served in a rich, creamy walnut sauce flavored with garlic, coriander, blue fenugreek, and warming spices. Although it can be enjoyed warm, satsivi is traditionally served cold or at room temperature, allowing the flavors to develop overnight. It’s the perfect centerpiece for a festive table and tastes even better the next day.

Ingredients

For the Chicken

  • 1 whole chicken (about 1.5–2 kg / 3½–4½ lb) or 8 chicken thighs
  • 1 onion, halved
  • 2 bay leaves
  • 6 black peppercorns
  • Salt, to taste

For the Walnut Sauce

  • 400 g (14 oz) walnuts
  • 1 large onion, finely chopped
  • 4 garlic cloves
  • 2 tbsp butter or neutral oil
  • 1 tsp ground coriander
  • 1 tsp blue fenugreek (utskho suneli)
  • ½ tsp ground turmeric
  • ½ tsp paprika
  • ¼ tsp cinnamon
  • ¼ tsp ground cloves (optional)
  • 1 tbsp white wine vinegar
  • 500–700 ml (2–3 cups) chicken broth
  • Salt and freshly ground black pepper

For Serving

  • Cooked white rice or fresh bread
  • Fresh chives or cilantro
  • Pomegranate seeds (optional)

Instructions

  1. Place the chicken in a large pot with the onion, bay leaves, peppercorns, salt, and enough water to cover. Bring to a gentle boil, skim off any foam, then reduce the heat and simmer for about 45–60 minutes until the chicken is fully cooked. Reserve the broth.
  2. Remove the chicken and let it cool slightly. If using a whole chicken, cut it into serving pieces. For extra flavor, lightly brown the chicken in the oven at 220°C (425°F) for 10–15 minutes until the skin becomes golden.
  3. Toast the walnuts in a dry pan for 3–4 minutes over medium heat, stirring constantly. Be careful not to burn them.
  4. Transfer the walnuts to a food processor along with the garlic and blend until very finely ground. The mixture should resemble a thick walnut paste.
  5. In a large saucepan, sauté the chopped onion in butter or oil over medium heat until soft and translucent, about 8–10 minutes.
  6. Add the coriander, blue fenugreek, turmeric, paprika, cinnamon, and cloves. Cook for one minute until fragrant.
  7. Stir in the walnut mixture, then gradually whisk in the warm chicken broth until smooth. The sauce should have the consistency of heavy cream. Add more broth if needed.
  8. Simmer gently for 10–15 minutes, stirring frequently. Do not allow the sauce to boil vigorously, as walnuts can separate.
  9. Season with salt, black pepper, and white wine vinegar. Taste and adjust the seasoning—the sauce should be rich, nutty, slightly tangy, and aromatic.
  10. Return the chicken to the sauce and gently simmer for another 5–10 minutes so the flavors combine.
  11. For the most authentic flavor, let the satsivi cool completely and refrigerate for several hours or overnight before serving.

Serving Suggestions

Serve satsivi chilled, at room temperature, or gently warmed with steamed white rice, fresh bread, or traditional Georgian bread. Garnish with chopped chives, cilantro, or pomegranate seeds for a fresh finish.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. Satsivi actually becomes even more flavorful after resting overnight as the walnut sauce matures.

Recipe Tips

  • Blue fenugreek (utskho suneli) gives satsivi its distinctive Georgian flavor.
  • Use freshly ground walnuts for the smoothest and richest sauce.
  • The sauce will naturally thicken as it cools.
  • A splash of vinegar added at the end brightens the rich walnut flavor.
  • Satsivi is traditionally prepared for holidays because it can be made a day in advance.
