Chicken Congee — Creamy Asian Breakfast Rice Porridge

Congee

A warm, silky and comforting classic from Asia, perfect for cozy mornings.

Chicken congee is a traditional Asian rice porridge known for its creamy texture and delicate flavor. It is made by slow-cooking rice in water or broth until it breaks down completely and becomes smooth and velvety.
This dish is simple, nourishing, inexpensive, and ideal for breakfast or any moment when you want something warm and soothing.

In this recipe, we also add a marinated soy egg prepared the night before, which brings extra flavor and richness to the bowl.

Ingredients

For the congee:

  • 1/2 cup white rice (any variety works: jasmine, basmati, long-grain)
  • 6–7 cups water or chicken broth
  • Salt, to taste
  • 1 cup cooked shredded chicken
  • 1 marinated egg (recipe below)
  • Green onions, finely sliced
  • Black sesame seeds
  • Chili oil, to taste

For the marinated soy egg:

  • 1 boiled egg
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon water
  • 2–3 slices fresh ginger
  • 1/2 teaspoon chili paste (optional)

Instructions

1. Preparing the marinated egg (do this the day before)

  1. Boil the egg to your preferred doneness (soft-boiled works best).
  2. In a small bowl, mix soy sauce, mirin, water, ginger slices and chili paste.
  3. Peel the egg and submerge it in the marinade.
  4. Refrigerate overnight, or at least 4–6 hours, for full flavor.

2. Making the congee

  1. Rinse the rice thoroughly under cold water.
  2. Add the rice to a pot along with 6–7 cups of water or chicken broth.
  3. Bring to a boil, then reduce to a low simmer.
  4. Cook for about 1 hour, stirring occasionally to prevent sticking.
  5. The rice will gradually break down and thicken; add more water if you prefer a thinner consistency.
  6. Season with salt to taste.

3. Assembling the bowl

  1. Ladle the hot congee into bowls.
  2. Add shredded chicken on top.
  3. Slice the marinated egg in half and place it over the porridge.
  4. Garnish with green onions, black sesame seeds and a drizzle of chili oil.

Serving Suggestions

  • Serve immediately while hot and creamy.
  • Adjust the consistency with extra water or broth depending on how thick you like it.
  • For additional flavor, you can add fried garlic, soy sauce, or extra chicken.
  • This dish also works well with leftover rotisserie chicken.
