For the base:

  • 1 large ciabatta roll (or 2 slices of ciabatta bread)
  • 1 tbsp olive oil

Toppings:

  • 1 ripe persimmon, thinly sliced
  • 1 small avocado, smashed with a fork
  • 8–10 mini mozzarella balls (or 1 small fresh mozzarella, torn into pieces)

  • 1 tsp butter or olive oil (for shrimp)
  • A pinch of salt
  • A pinch of black pepper
  • A drizzle of olive oil

3. Prepare the avocado

  1. In a small bowl, mash the avocado with a fork.
  2. Add a pinch of salt, black pepper, and a squeeze of lemon juice.
  3. Mix until creamy.

4. Assemble the toast

  1. Spread the mashed avocado over the toasted ciabatta.
  2. Layer the persimmon slices on top.
  3. Add mozzarella balls (whole or halved).
  4. Arrange the warm shrimp over the mozzarella.
  5. Drizzle with olive oil.
  6. Sprinkle with herbs and (optionally) chili flakes.

5. Serve

Serve immediately while the ciabatta is warm and crisp.

Tips & Variations

  • Add crunch: sprinkle roasted pumpkin seeds or pine nuts.
  • Make it vegetarian: skip the shrimp or replace with grilled mushrooms.
  • Add sweetness: drizzle a tiny bit of honey or balsamic glaze.
  • More freshness: top with arugula or microgreens.
