Golden Rice Bowl with Scallops & Asparagus

Golden Rice Bowl with Scallops & Asparagus

I often crave meals that are both grounding and light — something with warmth, but not heaviness. This golden rice bowl hits just that note.

Made with turmeric-scented rice, sautéed asparagus, and perfectly seared scallops, it’s a dish that feels elegant but deeply comforting. The turmeric gives the rice not only a vibrant colour but a subtle earthiness, while the asparagus brings crisp freshness, and the scallops — well, they speak for themselves. Sweet, buttery, golden on the edges.

I like to finish it with a squeeze of lemon and a drizzle of good olive oil to tie it all together. It’s the kind of dish that feels like sunshine on a grey day — bright, simple, satisfying.

If you’re looking for a naturally gluten- and dairy-free dinner that feels special without being fussy, this is one to save.

Ingredients:

For the turmeric rice:

  • 120 g jasmine or basmati rice
  • 240 ml water
  • ½ tsp ground turmeric
  • Salt to taste

For the toppings:

  • 10–12 asparagus spears
  • 6–8 scallops
  • 2 tbsp olive oil
  • 1 garlic clove, finely grated or minced
  • Salt and freshly ground black pepper

For serving:

  • Juice of ½ lemon
  • Extra virgin olive oil, for drizzling
  • Optional: microgreens or fresh herbs

Instructions:

1. Cook the turmeric rice:

  • Rinse the rice thoroughly under cold water.
  • In a saucepan, bring the water to a boil. Add a pinch of salt and the turmeric.
  • Stir in the rice, reduce heat to low, cover, and simmer for 12–15 minutes, or until the water is absorbed.
  • Remove from heat and let sit covered for 5 minutes, then fluff with a fork.

2. Blanch the asparagus:

  • Bring a pot of salted water to a boil.
  • Trim the tough ends off the asparagus.
  • Blanch the spears for 2–3 minutes until bright green and just tender.
  • Immediately transfer to an ice bath or rinse under cold water to stop the cooking.

3. Cook the scallops:

  • Pat the scallops dry with paper towels. Season with salt and pepper.
  • Heat 1 tbsp olive oil in a non-stick pan over high heat.
  • Sear the scallops for 1.5–2 minutes per side without moving them, until golden and just opaque in the center.
  • In the last 30 seconds, add the garlic and gently toss or spoon the garlic oil over the scallops.

4. Assemble the bowl:

  • Divide the turmeric rice between two bowls.
  • Arrange the blanched asparagus and seared scallops on top.
  • Finish with a squeeze of lemon juice, a drizzle of good olive oil, and a sprinkle of freshly ground pepper.
  • Garnish with microgreens or herbs if desired.

Tip:

Want even more flavour? You can gently warm the garlic in the olive oil before adding it to the scallops, for a mellow, infused taste.

A light yet satisfying dish that feels elegant and comforting. The turmeric rice brings gentle earthiness, the asparagus adds fresh crunch, and the scallops? Sweet, buttery, and golden. Perfect for when you want something special — without the fuss.
