Okay, so maybe not everyone wants a bowl of fish eggs first thing in the morning… but I do 😌
Ikura donburi is basically my love language in breakfast form. Warm rice, cold salmon roe, poached egg, a little soy sauce, and boom — I’m a happy human.
And yes, it does pop in your mouth. That’s the whole fun.
(Also: if your breakfast doesn’t stare back at you with shiny orange eyes, are you even living?)
Ingredients (1 serving):
- Warm cooked rice (Japanese short-grain or jasmine) – 1 cup
- Salmon roe (ikura) – 2–3 tablespoons
- Egg – 1
- Vinegar (for poaching) – 1 teaspoon
- Soy sauce – to taste
Instructions:
- Cook your rice and keep it warm and fluffy. Leftover rice works too—just reheat gently.
- Bring a small pot of water to a gentle simmer. Add a teaspoon of vinegar.
Crack the egg into a small bowl, then gently pour it into the simmering water.
Cook for about 2.5 to 3 minutes, until the white is set but the yolk is still runny.
Remove with a slotted spoon and let it drain. - Scoop the warm rice into a bowl. Top with the poached egg and spoon the ikura over the top.
Drizzle lightly with soy sauce.
Pro Tip:
Ikura Donburi is easy to meal-prep — just keep cooked rice and frozen ikura on hand.
It comes together in minutes and feels like something you’d get in a tiny Tokyo café.
