Comfort Beef Butter Pasta

Beef Pasta

A simple dish that works because of one thing: butter

There are recipes that impress with complexity – and then there are recipes that win because they understand flavor.

This is one of those dishes.

A classic Eastern European comfort meal: pasta, ground meat, onions… and one key ingredient that makes everything come together into something deeply satisfying – butter. Butter is what creates the texture, aroma, and that silky finish.

Ingredients (2–3 servings)

  • 250 g pasta (short shapes: elbow, fusilli, penne)
  • 300 g ground beef (preferably 15–20% fat)
  • 1 medium onion, finely chopped
  • 2–3 tbsp butter (don’t reduce this — it’s essential)
  • Salt
  • Freshly ground black pepper
  • Optional: 1 clove garlic

Instructions

  1. Bring a large pot of water to a boil and salt it well (it should taste like the sea). Cook pasta until al dente. Before draining, reserve 2–3 tablespoons of pasta water.
  2. Build the flavor base. In a large pan, melt half of the butter over medium heat.
  3. Add the onion and cook until:
  • soft
  • slightly golden
  • lightly sweet in aroma
  • (Optional: add garlic for the last 30 seconds)
  1. Brown the meat properly. Add the ground beef.

Important:

  • break it into small pieces
  • don’t stir constantly — let it brown

Cook until:

  • nicely caramelized
  • no excess moisture

Season generously with salt and black pepper.

  1. Combine pasta and meat. Add the drained pasta directly into the pan. Mix well so the pasta absorbs the meat juices.
  1. The key step (don’t skip this)

Add:

  • the remaining butter
  • a splash of pasta water

Toss everything together until:

  • butter fully melts
  • sauce becomes glossy
  • pasta is evenly coated

This creates a light emulsion – not greasy, but silky.

  1. Taste and adjust:
  • salt
  • pepper

Serve immediately while hot.

Serving tips

  • Best served fresh — this dish is all about texture
  • Add fresh herbs (dill or parsley) if you want brightness
  • Works surprisingly well with pickles on the side (Eastern European classic)
